Recipe of the Week
Here's a recipe for those of you with gardens this summer. Or neighbors or relatives with gardens from whom to mooch off of. Don't even bother trying this with grocery store bought vegetables because it's just not the same.
Summer Vegetables
1 onion, cut into bite sized chunks
2 squash or zuchinni, sliced
1 or 2 tomatoes (or a bunch of cherry tomatoes) cut into bite size pieces
finely chopped fresh basil (as much or as little as you want. I only use about 2 teaspoons)
a handful of grated parmesan cheese
salt and pepper to taste
2 Tbsp. olive oil
Steam squash. Meanwhile, sautee onion in olive oil. When onion is almost done, add tomatoes and cook just until the skins start to wrinkle. In a medium bowl, combine squash and onion/tomatoes. Sprinkle basil, parmesan cheese and salt and pepper on top and lightly toss.
