A Good Night

We had the most pleasant 4th of July. We cooked hamburgers on our new grill, which worked beautifully. The guys spent a small fortune on fireworks and proceeded to pop them as close to the house and people as they could. Lulu had a ball, but Blondie was scared to death of them. She spent the majority of last night inside watching everything from the back door. Our neighbors put on a spectacular fireworks show, putting ours to shame. About 9;30 or 10:00, we walked down to the end of of our driveway and could see about 8 to 10 different shows across Fort Worth. It was amazing. This picture is the best I could get. The weather was wonderful--not typical Texas July weather by far. At one point Lulu came to me and crawled in my lap and said she was cold! And to top it all off, my brother's girlfriend made the most wonderful chocolate chimichangas with raspberry sauce topped off with a scoop of vanilla ice cream. And this morning the girls are playing in the rain with all the used fireworks.

  1. Our's was similar...minus the chocolate chimichangas. We climbed in the loft, opened all the windows, turned the local radio station up as loud as we could (they were simul-casting with the city fireworks display), and had a 360 degree, amazingly beautiful display. We are blessed beyond belief!!!

  2. Our little town was rockin' with fireworks on the 4th. At times, it felt like an earthquake. Guess the city ordinace "No Fireworks in the City Limits" was lifted since everything is so wet from all the rain we've been getting.;)

    Earthquake Cake

    1 c. chopped pecans
    1 c. flaked coconut
    1 German chocolate cake mix
    1 stick margarine or butter
    8 oz.cream cheese(softened)
    2 c. powdered sugar

    Combine pecans and coconut and spread over bottom of greased 9x13 pan. Mix cake mix as directed and spread over pecan/coconut mixture. Cream together margarine, cream cheese, and powdered sugar. Pour over cake mix and swirl into cake batter with a knife. Bake at 350* for 45 minutes to 1 hour. If desired, sprinkle a little more pecan and coconut mixture over cake about 10 minutes before it is done. This cake really looks like an earthquake but is easy and delicious.
