Recipe of the Week

I made this last night for dinner. It caused me much frustration, but it was worth it. First rule when making this: DO NOT let a four year old squeeze the limes. Lime juice and contact lenses do not mix well. Second rule: DO NOT cut up the avocados early because you will eat them all and have to cut up another one later when you're in a hurry because your children are screaming (because they obviously haven't had a single thing to eat in the past week) and your husband is whining like said children from hunger. Third rule: pound the chicken really hard to vent your frustration. Grilled Chicken Sandwich 3 Tbsp olive oil 2 Tbsp lime juice 2 teaspoons cajun seasoning (or you can just use salt and pepper) 2 boneless skinless chicken breasts cut in half 4 small slices monterey jack cheese 4 hamburger buns (get the ones from the bakery, not the regular ones) 1 avocado, sliced lettuce mayonnaise (or miracle whip or ranch dressing) Stir together olive oil, lime juice, and seasoning. Place the chicken breasts between two sheets of wax paper. Using a meat pounder, flatten the chicken to an even thickness of about 1/2 inch. Place the chicken in the marinade, coating well. Cover and let sit for at least 15 minutes, preferably an hour. Grill on high heat until cooked through. Add cheese slices to chicken and close the grill cover to melt the cheese. Toast the buns lightly. Assemble sandwich with avocado, lettuce and mayo. Serves 4.
