Recipe of the Week

Brownies with Cherry Mousse 1 box of brownie mix (we prefer the mix with the packet of Hershey's syrup in it) 1 envelope unflavored gelatin 1/4 cup cold water 1/3 cup boiling water 2 cups heavy whipping cream 2/3 cup sugar 1/2 cup chopped maraschino cherries 3 teaspoons maraschino cherry juice Preheat oven and prepare brownies according to box instructions. In a small bowl, soften gelatin in cold water. Let stand for 2 minutes. Add boiling water, stirring until dissolved. In a medium bowl, beat whipping cream with an electric mixer until foamy. Gradually add sugar, beating until soft peaks form. Gently stir in gelatin mixture, cherries, and juice. Cover and chill 2 hours. To serve, pipe or spoon cherry mousse onto prepared brownies. I could eat a whole jar of cherries by myself, but other members of this household, who shall remain nameless, don't like cherries. So next time, I think I will try it with strawberries. This is particularly good when the brownies are still warm and the mousse on top is really cold. I will not confess as to how many I ate.

  1. Sorry, I will NOT be making your recipe of the week. Missy, I have 36 lbs to loose. Nope, I can't even make it for Craig and Alexis because I'm on a "see food diet" and all they eat is junk anyways. Looks good though. So, how many did you eat?

Oh and a good recipe for you and your minion of readers - take store bought choc chip cookie dough and roll out on a pie cooking sheet. Next press Thin Mints that you have quartered into the dough and bake. Then melt some white chocolate chips and drizzle over the pie. YUM-O and thanks Rachel Ray magazine!
